Happy Cinco De Mayo!

6 Healthy Cinco De Mayo Recipes - Diary of a Formerly Fat GirlHappy Cinco de Mayo! May 5th is everyone’s favorite excuse for guac and margaritas– and if that’s the path you’re heading down, then hydrate well and enjoy. But if you’re looking to avoid the caloric explosion that comes with Coronas and nachos, try one of these 6 recipes! You’ll still get a taste of Mexico, but you’ll also be able to button your jeans tomorrow morning.

Skinny Guac Great on top of basically anything, my calorie-conscious take on guacamole is a tried-and-true crowd pleaser. You’ll never reach for store-bought again! Click here for the recipe.  Roasted Jalapeno PoppersIf you’re looking for something a little spicy this Cinco de Mayo, look no further than my Roasted Jalapeno Poppers. Because the jalapenos are roasted, these little guys are about a zillion times better for you than the traditional breaded and deep fried poppers. Just remember not to touch your eyes after making them– those little guys are hot! Click here for the recipe.

Skinny Enchiladas - Diary of a Formerly Fat GirlFor a full on Cinco de Mayo meal experience that won’t leave you full of cheese and guilt, try my Skinny Enchiladas with handrolled flour tortillas. They’re one of my favorite recipes on the website, and they’re super clean, filling, and inexpensive to boot. And if you’ve never made your own tortillas, trust me– you’ll be wondering why you went with store bought for so long. Click here for the recipe.

Having people over? Try either (or both!) my Perfect 7 Layer Dip or Guacamole Hummus. Both are super easy to make and taste like they’re a lot worse for you than they are. Just be sure to get some when you have a chance– they’ll be gone before you know it! Click here for Guacamole Hummus, and here for 7 Layer Dip.

Mexican Catfish BowlsFinally, if you’re looking for a casual dinner that’s 110% clean but still has some Mexican flavor, try my new Protein-Packed Mexican Catfish Bowls. Topped with avocado-lime greek yogurt dressing and a fried egg, they’re filling bowls of goodness. Click here for the recipe.
