  1. 1/2 cup all purpose white flour
  2. 1/2 cup oat flour (if you don't have access to oat flour, you're fine using all purpose)
  3. 1/4 cup butter, softened to room temperature
  4. 1/4 cup low fat (or fat free) margarine, softened to room temperature
  5. 1/4 cup Truvia
  6. 2 tsp corn starch
  7. Zest of 1/2 of a lemon
  8. 2 large eggs, beaten
  9. 1 cup Truvia
  10. 3 Tbsp lemon juice
  11. Zest of 1/2 lemon
  12. 2 Tbsp flour
  1. Preheat your oven to 350F/175C and line an 8x8 pan with aluminum foil.
  2. In the bowl of a stand mixer, mix together butter, margarine, oat flour, 1/2 cup all purpose flower, Truvia, corn starch, and lemon zest with paddle attachment for at least two minutes.
  3. Press flour mixture into the bottom for your 8x8 pan. Press down with your fingers to form a firm crust.
  4. Bake for 15 minutes.
  5. While crust is baking, whisk together eggs, Truvia, lemon juice, lemon zest, and 2 Tbsp flour.
  6. After the crust has baked for 15 minutes, remove from the oven and pour whisked lemon mixture on top. Return to oven, and bake for 20 minutes. Top should be golden brown without seeming burned.
  7. Allow to cool fully before cutting into 16 evenly sized squares.
