Sort of like my popular banana-based protein cookies, these are low-cal, sugar free, vegan, gluten-free little baked morsels of pumpkiny goodness. And while their natural sweetness easily satisfies a dessert craving, they’re no one trick ponies; they’re great as a quick breakfast on-the-go or a hunger quashing 3pm snack. Ingredients
  1. 3/4 cup puree of pumpkin (not pumpkin pie filling)
  2. 1 1/2 tsp vanilla
  3. 1 tsp cinnamon
  4. 3/4 tsp pumpkin pie spice
  5. 1/3 cup Truvia (or equivalent measure of sweetener of your choice)
  6. 2 scoops of your favourite vanilla protein powder
  7. 3/4 cup raw, old fashioned, slow cooking oats
  8. 1/3 cup raisins
  9. 1/3 cup almonds (optional)
Instructions
  1. Preheat your oven to 350F/175C and lightly grease a cookie sheet.
  2. In a large bowl, mix together pumpkin, vanilla, cinnamon, & pumpkin pie spice until well combined.
  3. Add Truvia and protein powder, and mix thoroughly.
  4. Add oats, stirring until evenly distributed throughout batter.
  5. Finally, add raisins (and almonds, if using), mixing until just combined.
  6. Place heaping tablespoons full of batter half an inch apart on your cookie sheet.
  7. Bake 15-20 minutes, until golden brown and firm to the touch.
Notes
  1. Makes 9-12 cookies, depending on size.
