Dinner can be the trickiest dinner to get right. Frequently, if it’s healthy and low-cal, it isn’t filling and satisfying (and vice-versa). We’re never working with as much time as we think we are, and it’s really easy to get an entree rut.
With that in mind, here are 6 of my go-to healthy, quick, and delicious under 400-calorie weeknight dinners that’ll satisfy even the pickiest of eaters in your family!
1. Super Veggie Lasagna
Made with black beans, tofu, and kale, I call it ‘Super’ because, unlike most other veggie lasagnas, mine is packed with enough protein to keep you full and ready for your next work out. 2. Thai Shrimp, Mango, & Avocado Spinach Salad

4. Red Lentil, Spinach, & Carrot Burgers
Vegan, gluten-free, and friendly to pretty much every diet around, these veggie burgers are the result of a three-year search for the perfect cheeseburger substitute. No, they don’t taste exactly like a cheeseburger. No veggie burger does, and if someone tells you that their veggie burger does, they’re lying. That isn’t the point. They’re tasty, perfect on the BBQ, and while they aren’t a juicy cheeseburger, they also aren’t full of fat, calories, and regret. Get the recipe here.

Made with loads of peppers, whole-grain wild rice, and shrimp (and if you’re a carnivore, chicken, too!), this hearty, filling meal provides comfort without any comfort-food guilt. 6. Vegan Thai Green Curry with Red Lentils, Green Beans, & Coriander-Mango Salsa
Of all of my favourite recipes, this is one of my favourite favourite recipes. Easy to make and super filling, this low-fat, vegan, and gluten-free dinner packs a protein-filled punch with red lentils and tofu.Green beans add a lovely crunch, while sweet potato adds a natural, low-glycemic index sweetness.
