With about 3/4 less fat than traditional cheesecake and only 118 calories per bar, they’ll keep your cravings at bay and your waistline in check. Skinny Lemon-Blueberry Cheesecake Bars

For the Crust
  1. 15 reduced-fat graham crackers (or 1 3/4 cup graham cracker crumbs)
  2. 1/2 cup Truvia (or sweetener of choice)
  3. 1/3 cup fat-free margarine, melted
For the Filling
  1. 1 cup reduced-fat cream cheese, softened
  2. 1 cup 0% fat plain greek yogurt
  3. 1/2 cup Truvia (or sweetener of choice)
  4. 1/2 cup egg whites
  5. 4 Tbsp lemon juice
  6. 1 1/2 tsp vanilla
  7. 1 Tbsp flour
  8. 1 1/2- 1 3/4 c blueberries (fresh or thawed)
Instructions
  1. Line an 8x8 pan with aluminum foil and preheat oven to 350F/175C
  2. Mix together ingredients for crust in a medium bowl. Pour into pan and pat into a firm and even crust with a spoon. Bake for 7 minutes, remove from oven and set aside.
  3. In a large bowl, beat cream cheese and yogurt together until full incorporated, smooth, and fluffy (about 5 minutes).
  4. Add Truvia, beat for one minute.
  5. Add egg whites, vanilla, lemon juice, and flour, beating for an additional minute.
  6. Finally, fold blueberries into batter.
  7. Spoon evenly onto crust and bake for 45-50 minutes, until the bars feel firm and the top has started to brown.
  8. Chill in the fridge for at least an hour before cutting into bars.
Notes
  1. Feel free to substitute Splenda or just plain old sugar for Truvia-- just know that any substitutions will effect the bars' nutritional profile.
  2. These bars will keep well for 5-7 days if stored in the fridge, though the odds are very likely that they'll get eaten long before that. They'll also keep fresh in the freezer for about 6 months.
