Spring is finally here! To celebrate, last night I welcomed the season with an appropriately-coloured vegan curry.Vegan Green Curry

Easy to make and super filling, this low-fat, vegan, and gluten-free dinner packs a protein-filled punch with red lentils and tofu. Green beans add a lovely crunch, while sweet potato adds a natural, low-glycemic index sweetness. Top it off with a coriander-mango salsa and a dash of lime, and you’ve got a lean, clean, and green dinner. Thai Green Curry

For the Curry
  1. 2 Tbsp extra virgin olive oil
  2. 1 yellow onion, diced
  3. 1/3 cup green curry paste
  4. 1 cup water
  5. 1 Tbsp powdered vegetable stock
  6. 1 large sweet potato, cut into 1 inch cubes
  7. 1 jalapeno pepper, deseeded and chopped
  8. 1 package firm tofu, cut into 1 inch squares
  9. 1 can red lentils, drained and rinsed
  10. 1 can (341ml) reduced fat coconut milk
  11. 1 cup green beans, cut in half
  12. salt and pepper, to taste
For the Salsa
  1. 3-4 mangos, peeled and diced
  2. 3/4 cup cilantro, diced
  3. 3 Tbsp lime juice
  4. 2 Tbsp extra virgin olive oil
  5. salt and pepper, to taste
  1. In a large pan (I used a wok), heat your oil on medium.
  2. Add onion and cook for 5 minutes, stirring to avoid any burning.
  3. Add your water, curry paste, and vegetable stock. Mix.
  4. Add sweet potato, and let cook for about 15 minutes, adding more water if necessary.
  5. Once sweet potato has softened a bit, add jalapeno, lentils, and coconut milk. Reduce heat to medium-low (3-4 on most stovetops).
  6. Add tofu, and cook for 10 minutes.
  7. Finally, add your green beans and cook for another 3-5 minutes.
  8. Remove from heat and add salt and pepper, to taste.
  9. Serve on wild rice, bulgur wheat, or quinoa, and top with Coriander-Mango Salsa.
For the Salsa
  1. Mix all ingredients together in a small bowl, leaving aside extra lime juice if desired.
