Dark Chocolate & Cranberry Quinoa Blondies

THAT is what came out of my guy’s mouth after he ate one of these blondies. That is BIG. I make skinny peanut butter brownies and protein cookies and skinny german apple cake. But these blondies got the fanfare last night.

They’re sugar-free (minus the chocolate chips). They’re gluten-free. They’re low-fat, and they’re only 56 calories per square. They’re also exceedingly easy to make, and clean-up is a breeze.

Dark Chocolate Chip and Cranberry Quinoa Blondies

  1. 1/4 cup non-fat greek yogurt (either plain or vanilla)
  2. 1/4 cup fat-free margarine
  3. 1 cup Splenda
  4. 1 1/2 tsp all natural black strap molasses
  5. 1/3 cup egg whites
  6. 2 tsp vanilla
  7. Pinch of salt
  8. 1/2 cup quinoa flour
  9. 1/2 soy flour
  10. 1/2 cup pure dark chocolate chips
  11. 1/2 cup dried cherries
  1. Preheat your oven to 350F/175C and grease a pie pan (8x11 pan works, too)
  2. In a large bowl, mix together your yogurt, margarine, Splenda, and molasses until thoroughly incorporated (should be about 2 minutes).
  3. Mix in your egg whites and vanilla.
  4. Add your salt and both types of flour, mix until you have a thick dough.
  5. Finally, add your chocolate chips and dried cherries. Mix until even throughout.
  6. Spoon into you pie plate, and smooth until even with a spatula.
  7. Bake for 20-23 minutes, until edges begin to turn a golden brown and center is firm to the touch.
  8. Let cool in the pan for at least 20 minutes before cutting.
  1. If you can't find either quinoa flour or soy flour at the grocery store, try your local natural food, health food, or bulk food store. If you aren't concerned about gluten and are in a pinch, you can substitute either with whole wheat flour, as well.
