Hearty Vegan Chili with Kale, Quinoa, and Brown Lentils

Normally, chili evokes images of huge pots being stirred by hunky firefighters, large amounts of ground beef, and big dollops of sour cream. Not exactly super-duper-healthy.

Forget all that. My Hearty Vegan Chili is jam-packed with superfoods, protein, and fibre– but stays low cal, low fat, and guilt-free. It’ll warm you up and keep you satisfied, without breaking the caloric bank. It’s the best of both worlds! Hunky firefighters not included.

You’re gonna need:

2 tsp extra virgin olive oil

2 white onions

3 cloves of garlic

2 cans of tomatoes

1 Tbsp powdered veggie stock

3 Tbsp chili powder

2 Tbsp paprika

2 tsp cayenne pepper

2 tsp red pepper flakes

Salt and pepper, to taste

1 tsp molasses

1 1/2 cup brown lentils

1 cup uncooked quinoa

1 can of chick peas, drained and rinsed

1 can of corn

2 spicy peppers, diced

1 cup green cabbage, chopped

2 cups kale, de-spined and chopped

First off, you’ll want to grab a large pot. Dice your onions, and heat your oil on medium.

P1150436Throw them in the pot, and cook until translucent– should be about 7 minutes. While they’re cooking, dice your garlic.

P1150442Once your onions are becoming clear, add your garlic. Cook for about 45 seconds– be sure to stir, to avoid the dreaded burnt garlic! Now, add your canned tomatoes.

P1150443Add 2 cups of water, chicken stock, and spices. Stir, stir, stir.

P1150447Now, chili is fun because it is truly super simple– you’re basically throwing everything into a pot. With that in mind, add your lentils, peppers, and quinoa.

P1150448rainbow_quinoa_ref-1951Let cook for at least half an hour–remembering to stir occasionally and add more water if the chili appears to be getting too dry.

Keep reducing and adding water, until you’re about 20-30 minutes from wanting to eat. Ready? Add your chick peas, your corn, your kale, and your cabbage.

Let cook, and serve piping hot in big bowls. If you find yourself reaching for the sour cream– hold your horses! Add a big dollop of 0% fat plain greek yogurt for that creamy satisfaction without the guilt.
