This super tasty soup tastes like something you’d get at your favourite Thai restaurant…only healthier! Filling enough to stand alone as a meal and full of all of the good stuff, you’ll find yourself craving this great soup again and again.
You’re gonna need:
2 Tbsp extra virgin olive oil
1 large white onion
1 clove garlic
1 lb shrimp, peeled and deveined
4 tsp powdered chicken stock
Umpteen cups of water
2 Tbsp fresh ginger
1 piece lemongrass, crushed
1 spicy pepper, sliced lengthwise
1 can (400ml) light coconut milk
2 cups bok choy, diced
Big pinch of cilantro, chopped
Slice of lime
First off, you’re going to want to dice your onion.
Once you’re done drying your tears, heat your oil in a large, soup-worthy pot on medium heat, and add your onions. Cook until soft (about 8 minutes). Add your diced garlic, cook for another 45-60 seconds.
Now, grab your shrimp and throw them in the pot (be sure to have some tongs/other grabbing device and a clean plate at the ready). Cook them for about a minute, until they just start to turn pink. Remove them from the pot and set aside. This trick really adds extra flavour! As soon as you remove them, add a cup of water to the pot.
Now, mix your chicken stock into some water. 4 tsp of stock calls for 1 cup of water, but these measurements don’t need to be exact.
Add to your pot, and keep cooking on medium heat. Add your ginger…
…and your pepper.
As is the case with all soups—more reduction = more flavour! Let your soup cook down, add more water, and repeat. The more you do this, the better your soup will be.
When you’re about 5 minutes from wanting to serve your soup, add your shrimp. When you’re about three minutes from being ready to serve your soup, add your coconut milk and bok choy. Once you’ve added your coconut milk, be sure to keep stirring your soup… no one likes burned coconut milk!
Ladle your soup into big bowls, and top with cilantro. Don’t forget to give it a big squeeze of lime juice… it makes the whole dish!
