This time of year is great for many things– parties, tans, swimming, vacations…
If you’re lucky enough to have a garden or pots of tomatoes, you probably started seeing the oh-so-promising red hints of ripening a few weeks ago, and are now enjoying a tomato bounty. This is my first year with a proper garden, and with some much needed guidance from my guy and my mother-in-law, I’m seeing delicious and rewarding results.
Even if you’re garden-free, enjoy the fruits of the season! Try a local farmers’ market, farm stand, or even a local grocer to get in-season fruits and veggies. It’s a great, healthy way to enjoy summer–and you won’t believe how much tastier local produce is. Carrots taste like candy, cucumbers melt in your mouth…and don’t even get me started on the blueberries.
The one ‘problem’? You’ll have more fresh produce than you know what to do with! Try making sauces, simple chopped salads, stir fry dishes, or grilled veggie dishes with all of your garden loot.
One of my favourite easy dishes? Tomato and cucumber salad!
It starts like this…
…and ends up like this!
Top with a little oil, a little vinegar, a little salt, and a little sugar, and enjoy.
Happy Tomato Season!!
