100% Naughty, Cheat-Day Approved Oatmeal-Peanut-Butter-Chocolate-Chippers

 

As you know, I dig a good chocolate chip cookie. One of life’s true pleasures, you can check out my favourite chocolate chipper recipe here. But sometimes, a girl needs a break from the norm on her cheat day.

Enter my Oatmeal Peanut Butter Chocolate Chippers.

Seriously, these bad boys have something for everyone. Loaded with peanut buttery goodness, packed with chocolate chips, and full of texture, just try to only have one.

They’re also impossibly easy to make. Another bonus? They’re so damn tasty, they’ll be gone long before your cheat-day is over, easing your fears of temptation for the rest of the week. What could be better?!

You’re gonna need:

½ c butter or margarine, softened

1 c white sugar

½ tsp dark molasses

1 c peanut butter (I get down with crunchy, but go with whatever suits your fancy)

1 tsp vanilla

½ tsp salt

1 tsp baking soda

1 c white flour

¾ c OLD FASHIONED oats (not quick oats)

¾ c high quality semi-sweet chocolate chips

Preheat your oven to 350F/175C and grease a baking sheet.

As you know, I’m all about a no-mess approach in the kitchen (why would you want to waste your time doing dishes?!), so this is a one-bowl recipe. Grab a big bowl, and cream together your butter and sugar.

Add your peanut butter, vanilla, and your eggs. Stir thoroughly.

Throw in your baking soda and salt. Mix ‘er in there.

Add your flour….

…and mix, mix, mix!

Throw in your oats…

…and finally, your chocolate chips!

Seriously, how badly do you want that right now?!

Scoop into blobs on your cookie sheet, and bake for 8-10 minutes.

Take ’em off the sheet after about 5 minutes, and let them cool on a rack– if you can wait that long!
