Asian Edamame, Mango, and Bulgur Salad

Though there are few foods I love more than my world-famous quinoa salad, sometimes a girl just needs a change.

Which is why I came up with this fabulous asian salad! With the same vegan, high protein, 110% clean appeal as my quinoa salad, this super-filling and tasty treat can be lunch, dinner, or a snack! I suggest making a big bowl and keeping it in the fridge… you won’t believe how frequently you’ll reach for it! It can be made with either bulgur or quinoa, though I prefer bulgur as I’m not celiac (it’s about 1/10 the cost, sustainably grown, and has an almost identical nutritional profile.)

You’re gonna need:

For the Salad:

3/4 c cooked bulgur/quinoa, cooked (click here for my perfect-every-time grain cooking tip!)

3 cups red cabbage, chopped

Handfull of cilantro, chopped

1 cup de-shelled edamame

2 mangos, cut into small pieces

3/4 cup chopped green beans (optional)

For the Dressing

3 tbsp olive oil

1 1/2 tsp reduced fat peanut butter

Juice of 3 limes

Dash of salt

Grab a big bowl, and add your cooked (and cooled!) bulgur/quinoa.

Throw in your cilantro, and mix together.

Add your cabbage, and mix.

Throw in your edamame…

And don’t forget your mango!

In a small glass, mix together all of your dressing ingredients. Pour over the salad, and get ready for one super clean, super tasty meal.
