Skinny Chocolate Peanut Butter Muffins

 I love a good skinny muffin. A perfect fix for those if-I-don’t-eat-a-carb-I-might-perish moments, these skinny chocolate peanut butter muffins combine the deliciousness of a Reese’s Peanut Butter Cup with a moist, satisfying muffin…. all for under 60 calories!

 You’re gonna need:

1/2 c 0% fat plain greek yogourt

1/2 c unsweetened applesauce

2 tsp vanilla

2 bananas (turning brown? no problem!)

1/2 cup splenda (or stevia)

1/2 cup unsweetened cocoa powder

1/4 c reduced fat peanut butter

3/4 cup oat flour

1/4 cup all purpose flour

1 tsp baking soda

1 tsp baking powder

Dash of salt

1/8 c reduced fat peanut butter

 Preheat your oven to 350 degrees.

First off, you’re going to want to mash your bananas. A fork works perfectly!

 Now, mix those bananas together with your yogourt, applesauce, and vanilla. Some chunks of banana are just fine!

 Add your Splenda and peanut butter (1/4 cup), and mix.

 Add your cocoa, baking soda, baking powder, salt, and flour(s)…

 And thoroughly incorporate, without over mixing!

 Using a tablespoon, spoon batter into muffin tins. I hate the waste of muffin/cupcake liners, so I simply grease my pan instead. Fill to almost-but-not-quite-full levels.

 Now, here is the fun part! Microwave your remaining peanut butter (1/8 cup) for 10-15 seconds. With a wee spoon, add a little dollop of this liquid deliciousness to top your muffins.

 Swirl with a butter knife, toothpick, or spoon.

 Yours should look something like this! Bake for 15-20 minutes, or until you can remove a toothpick without any batter residue.
