Yeah, I just said that.
If you follow my blog (or know about my Non-Diet Diet), you know that sometimes, you just have to indulge your cravings. As Monday is my long run day, Sunday usually consists of at least one delicious cheat. They’re are almost ALWAYS dessert related– and this one’s a doozie. Chocolate, vanilla, cream cheese swirl heaven. These brownies will disappear before you can say ‘cheat-day’!
You’re gonna need:
For the Brownies
2 large eggs
1/2 c unsalted butter
1 c white sugar
2 tsp vanilla
1/4 c unsweetened cocoa powder
3/4 tsp salt
red food colouring
1/4 tsp white vinegar
1 cup all purpose flour
For the Cream Cheese Swirl
125 grams cream cheese
1/4 c white sugar
1 egg yolk
1/2 tsp vanilla
First off, preheat your oven to 350 and grease a square baking tin (mine is 8 x 8).
Now, in a small bowl, beat your two eggs together and set aside.
Now, in a big microwave safe bowl, melt your butter. Stir in the sugar, vanilla, cocoa, salt, food colouring, and vinegar. Whisk in your eggs, and fold in your flour.
Pour the batter into your pan, leaving about 1/4 of a cup still in your bowl.
Now, throw all of your remaining ingredients (everything for the cream cheese swirl) into a bowl.
Use a handmixer to beat together until light and lump-free (took me about a minute).
With a big spoon, place dollops of this on top of your brownie batter.
Top with your remaining brownie batter. Grab a butter knife, and with a cutting motion, create a cream cheese swirl throughout the brownie batter.
Bake for about 35 minutes.
Let them cool before cutting (if you can wait that long!)
